Anything cooked in wine or spirits can be ubriaco.

Formaggio ubriaco, a raw cow's milk cheese invented in Treviso, aged for 12 months, and then soaked in wine (or grappa or even prosecco), giving it its unique taste. Generally it has a purple rind, and a taste like a mature cheddar, but spicier.
