bardiccio fiorentino

Florentine sausage

Made in 18 comunes in the province of Florence, bardiccio fiorentino is a soft reddish sausage made of beef and pork, and strongly seasoned with fennel.

In spring, Rufina holds a Sagra del tortello e bardiccio; October, Vicchio holds a Sagra du bardiccio.
