cacio e uova

cheese balls

Also cace e ove. Instead of meat balls, these are cheese balls (polpette or pallotte cace e ove) made with ricotta, pecorino or parmesan, breadcrumbs, garlic and parsley. They are fried in olive oil, then slowly cooked in a tomato sauce, and served on their own or with spaghetti.

Pallotte cac’ e ove are often served during the Christmas season.
