ancient Tuscan blood sausage

An age-old rustic sausage with a soft consistancy, made of pig's blood, head, heart and tongue, mixed with spices.

Three different kinds, the biroldo della Garfagnana, biroldo delle Apuane and biroldo di Lucca are designated PAT.
