pane caliatu

twice-baked bread

The best thing to do with stale bread—slice it and bake it again in a very slow oven. Keeps forever. In the Aeolian Islands, where it's traditional (no doubt related to the Greek paximathia), they use them for crostini, or crumble them into salads.
