soft-shelled crabs from the Venetian lagoon

Moleche (singular moleca) or moeche or mo'eca in Venetian dialect, are caught in spring and fall when they lose their shells; generally soaked in egg and flour and deep fried.

If they're caught in late summer when they're trying to reproduce, they're called masanete ormasenete.
