Lavaret whitefish

Lavarello

A speciality of the Italian Lakes and north Lazio lakes, though also stocked elsewhere. Related to trout and salmon, prized by sport fishermen, it was introduced in the early 20th century. It tastes best in July and August.

A closely related fish is the coregone.
