Argyrosomus regius. A large fish that can grow over to two metres and weigh 100km and makes the deep croaking noises of its name. One of the least threatened fish in the Med, it has many names in Italian: Bocca d’Oro, Boccadella, Umbrina di Canali, Ombrina Boccadora, Laccia.
New on the scene, however, is the Corba rossa del Gargano s a fish from the Gulf of Mexico farmed in the waters off the slopes of the Gargano that is enjoying a period of national fame thanks to its delicate flavor and low-fat flesh.
