Mondeghili are meatballs made from yesterday's boiled beef, along with other ingredients (often pork, either sausage, mortadella, or liver etc), egg, breadcrumbs soaked in milk, spices and parsley, then fried in butter.
The curious name arrived with the Spanish who governed Milan from Madrid for a 170 years. The Spanish word albóndiga (derived from the Arabic al-bunduqa, the ‘little hazelnut’) evolved into almondeguilla, then mondeghili...
Other names include mondeghini mondeghitt or in Pavia, munighili—In Lomellina they are sometimes called friciulìn.
