Atlantic bonito

Sarda sarda or palamita is similar to tuna (its other name is tonnetto), and used in many of the same ways: the sea around the Tuscan archipelago is a popular fishing ground. Much of the catch is preserved in olive oil, with bay leaves, pepper and chilli.
