Any lamb over a year old is a mouton in France, although don’t expect to see it in the supermarché or restaurant, although there are dishes such as baron de mouton— a rack of lamb (or mutton) with two gigots and mouton en pistache.

A gasconnade, among other things, is a baron de mouton baked with anchovies and garlic and wine.
