Guinettes or cerises à l'eau de vie are cherries macerated in brandy, then flavoured with Kirsch. You can also find guinettes à l’Armagnac, used in anything from desserts to a side dish with roast pork or game.

Guinettes bordelaises or guignes bordelaises, covered in fondant and dipped in dark chocolate, are a speciality of Bordeaux.
