Tours - Halles de Tours - Avril 2019 - Rillons de Tours

A speciality of Tours and Vouvray, similar to the Italian ciccioli and served as an aperitif.

Rillons are made by salting, then frying pork belly chunks in duck fat or lard with a bottle Vouvray wine, and spoonfuls of chicorée for colour. Drain off the fat and serve cold.
