Basque sheep cheese

Whole French sheep's milk cheese "Etorki".

Made in a dairy in Mauléon-Licharre, Etorki is made from pasteurized sheep's milk, aged seven weeks, with a smeared rind (croûte morgée) and an uncooked pressed paste. It’s sold all across France.
