Mache

Valerianella locusta. Mâche is a very popular salad green in France, which is the world’s top producer (notably the département of the Loire-Atlantique). Shaped like lamb’s ears and picked in little sprigs, mâche is almost always sold in plastic bags in the refrigerated section of the supermarket, sometimes mixed together with roquette.

Also known as blanchette, boursette, clairette, doulcéta, doucette, gallinette, herbe des chanoines, raiponce, oreillette, oreille-de-lièvre, poule grasse, romande, rampon, ramponnet, salade de blé, valérianelle, or valérianelle cultivée.
