Traditional French gougères

Gougères are a savoury nibble made with pâte à la choux and grated cheese, invented or so they say, in Tonnerre in Burgundy, as a bite to go with wine tasting.

The traditional cheese used is either Comté or Gruyère; they taste very very good warm or cold.
