pissaladière

onion, anchovy and olive ‘pizza’

Typical pissaladière.

A speciality of Nice and the neighbouring Italian region of Liguria, this Riviera-style pizza is made from onions fried in olive oil with herbes de Provence with anchovies melted among them, topped on a thinly rolled bread/pizza dough decorated with more anchovies and black olives to make a diamond or square pattern, then baked to eat at room temperature.
