A speciality of Yonne département, Soumaintrain IGP is the rustic cousin of Burgundy’s other gooey whole cow’s milk cheese, Epoisses. It has a soft white paste and washed rind that turns golden with age.
Like other similar cheeses, there is a fermier version, made the old fashioned way on the farm, and a laitier version made in a dairy. It’s delicious with a glass of Burgundy or Chablis.
