chick pea pancake

Socca, just coming out of the oven and served hot, in the old town of Nice (Vieux-Nice), on the French Riviera (Alpes-Maritimes, France).

Nice is the home of socca, a flat pancake made of chick pea flour and olive oil, baked in a large round pan until crispy and crunchy on the outside but tender within. It’s a popular street food; baked portions are cut out with a spatula, to eat while you stroll.

Over the border in Liguria it’s called farinata. To the west, around Toulon, a similar but thicker pancake is called cade.
