Checking in at 75% fat, Saint-André is a velvety triple cream cow’s milk cheese with a bloomy rind that equals Brillat-Savarin in pure decadence. Originally made in the Averyon, today the cheese is made by the Compagnie des fromage & Richesmonts in Vire, in the Calvados department.
