Petits farcis de Provence

Very popular in Nice, petits farcis are little tomatoes, green and red peppers, onions, courgettes, aubergines and/or mushrooms stuffed with a mix of ground beef and veal, shallots and gruyère râpé, with a bit of bread and milk to bind them. Everyone’s recipe is a bit different, however.
