Basque risotto
Gaxuxa means ‘rice’ in Basque, and this classic risotto is a filling dish made with olive oil, tomatoes, red peppers, chorizo, smoked pork belly, onions, green olives and piment d’Espelette. Some had chicken to the dish as well.
