Fyllo pastry 'spools' from Chios are a sweet version of flogeres, filled with a mix of chopped walnuts and almonds, butter, sugar, cloves and cinnamon, fried and then soaked in a syrup made with sugar, water and cognac.

Some who like them very very sweet fill them with chopped loukoumia, almonds and mastic.
