Γαλαζοκάβουρας

A female Atlantic Blue Crab (Callinectes sapidus) in the permanent collection of The Children’s Museum of Indianapolis

Callinectes sapidus or the Atlantic Blue Crab. Originally from the west Atlantic, notably Chesapeake Bay, it came to Greece probably as ship’s ballast, and has made itself at home, devouring native species. If it’s on the menu, order it; like that other invasive species, leontopsaro, it’s delicious.
