There are many kinds of xinótyro (literally sour (or tangy) cheese) around the Aegean islands. One, Crete’s xinomyzíthra has been designated PDO.
You wouldn’t think there were many cows on the Cycladic islands, but they give enough milk to make the cheese on Náxos, Páros and Syros. There are versions with goat’s milk too. All are white, with a bite, and well worth seeking out.
