Tuscan style barbecued ribs

Spicy pork ribs (costicine di maiale) grilled on a wood fire. Some Tuscan butchers will prepare the meat for a medieval dish, rosticciana farcita: thickly sliced deboned ribs stuffed with dried figs, baked in the oven and basted in white wine.
