giblets, or an offal stew

Rigaglie (also spelled regaglie) are the giblets of a fowl (hearts, livers, etc); rigaglie di pollo in the sauce is what makes vincisgrassi special.

Rigaglia is a kind of offal stew made in Pistoia, using veal entrails.
