dry pork sausage from Etna

Pork sausage dried for a month and flavoured with pepper.

Sicily's other soppressata, U suppessato is made in the Nebrodi Mountains of Messina, and flavoured with wild fennel, garlic, black and red pepper, oregano, vinegar and pepperoncino.
