Native to the Middle East, pois chiches have been in France since the time of Charlemagne, who in the capitulaire De Villis from the late 8th century recommended them for his subjects’ gardens.
Because they grow in poor rocky soil they are cultivated in parts of the south of France, notably in Rougiers in the Var, which calls itself the ‘Capitale du Pois Chiche’.
They are always available in French supermarkets, either dried or tinned; they are an important ingredient in couscous, panisses or socca.
