Also known as Cabrion or Chevroton du Mâconnais, this fresh or aged goat cheese from the Mâcon region is one of the smallest in France—fresh and white, it is swallowed in one bite; when it’s aged and dried and more potently goaty, it’s good with salad.
It’s similar to Rigotte de Condrieu.
