'intoxicated' cheese

Imbriago cheese

Imbriago is the Venetian word for drunk, and also the name for cheeses (Montasio, Asiago or Latteria) that are soaked in vats of grape must for at least a week, with much attention paid to just the grape variety to achieve the proper flavour. In Friuli the same cheese is called sot la trape.
