Batzos is a traditional spongy-textured cheese made from the milk of goats and sheep bred in a traditional manner in Western and Central Macedonia and Thessaly, and ripened in brine in local cellars; it's generally made into saganaki, and dipped into makalo. Designated POP (PDO)
