Bátzos

Μπάτζος

Bátzos is a traditional spongy-textured cheese made from the milk of goats and sheep bred in a traditional manner in Western and Central Macedonia and Thessaly, and ripened in brine in local cellars; it's generally made into saganáki, and dipped into makalo.
